What's Gourmet Wild Food?

I've always loved to cook and I was very lucky to grow up with parents for whom cooking was a passion. So I learned a lot from them. Growing in Belgium my influence was mostly French/Country cooking but having traveled in various parts of the world during my life, I've also experimented with various ethnic food from Asian to Middle Eastern.

When I started to learn wild food, I became immediately interested in creating some interesting dishes. One of my goal is to create wild food dishes that could rival what is offered in a good restaurant in terms of taste, quality and aesthetics.

My criteria for calling a gourmet dish "Wild" is to have at least 70% of the ingredients coming from the wilderness and the rest is often home grown or, to be more precise in my case, apartment grown.

I've only posted a few recipes and, as time permit, I will add more.

Some of the recipes are VERY simple but very tasty.
