Watercress Soup
Dice one white onion and cook it a bit with butter or olive oil.
Add around 1 quart of water and let it simmer for 30 mins - I also add a bit of Italian herbs and some garlic.
Add 1 Large potato diced (I actually use dehydrated mashed potatoes "powder" from Trader Joe)
I do something different than other recipes and I love it. After 30 mins, I pour one glass of white wine.
Then add 1 pint of Half&Half and let it come back to a small boil.
While all this is boiling, I remove the main stems from the watercress, then dice the leaves/small stems.
When the watercress is ready, add it and let it simmer for 5 to 10 minutes.
Then I blend it and depending on the texture/taste, add a bit more mashed potatoes, salt, pepper if necessary.
