Wild Food Pizza

Well, not really a pizza but really close and more healthy. The only thing that I had to purchase was Pitta bread and a bit a parmesan cheese.

This is a very simple recipe but very good. Around 90% of the ingredients are from Wild Food or home grown. I used the following:

Pitta Bread - a bit of Olive oil - Tomatoes (Home Grown very tasty) - Lambsquarters (picked up while hiking) - Wild Radish - Wild Mustard - a clove of Garlic - Alfalfa Sprouts (home grown) and a bit of Basil (also home grown).

First I cook the Lambsquarters leaves in olive oil with some garlic. I add a tiny bit of soy sauce once it is cooked.

I take the pitta bread and cover it with a light coat of olive oil, place around 4 basil leaves evenly on the bread and add 3 slices of tomatoes. Between the tomatoes, I place the cooked lambsquarters. I chop a clove of garlic in tiny pieces and sprinkle it over the tomatoes and lambsquarters. I then add the parmesan cheese (around 2 spoons) with some salt, pepper and a bit of Italian herbs.

I place it in the oven and broil it. It takes around 10 minutes.

Once the pizza is ready I add the wild mustard and wild radish as decoration (you can eat it too) and some home grown alfalfa sprouts on the side.
