Roasted Chicken and Lambsquarters

Very simple meal to prepare...

Cook about 11/2 cup of Lambsquarters leaves (I chop all the leaves around 8 times) in olive oil, add some garlic cloves ( I usually add 4). I add a 1/4 cup of water while cooking.

After 5-10 minutes, I add some soy sauce (taste it as you go along, you don't want to overdo it) and some pepper.

Let it cool down, you can eat it cold.

I pick up some rosemary from the front of my apartment complex, chop the chicken breasts in rough squares of around 1 inch, stir-fry the chicken in olive oil with some Italian spices, rosemary and soy sauce. Add pepper.

Take some home grown alfalfa from my sprouting jar and make the whole thing very Zen looking.

Make a nice, light lunch.
